Banana pudding is a sweet Southern dessert made with layers of vanilla custard, cookies, and slices of fresh bananas.
The dish may be topped with whipped cream or, as in my Grandmother’s traditional Southern Banana Pudding recipe, Meringue!
3 eggs, separate and use whites for meringue
1 1/2 to 2 c. milk
1 tbsp. flour, or more as needed to thicken
1 tsp. vanilla
1 c. sugar
Stir until thickened and pour over Vanilla Wafers.
Stir in sliced bananas.
3 egg whites, at room temperature
1/4 tsp cream of tartar
1/4 cup granulated sugar
Beat the egg whites and cream of tartar in medium sized bowl with mixer on high speed until foamy.
Gradually beat in the sugar until stiff peaks form.
Spread over pudding, sealing to the edge of the dish.
Bake 15 min. or until meringue is browned. Cool.
