2 lbs. stewing beef
1 beef knuckle bone, cracked
1 stalk celery with leaves, chopped
1 lg. onion, chopped
3 qts. water
6 lg. ripe tomatoes, peeled & chopped
1 lb. okra, washed & cut in 1/2″ circles
1 c. uncooked rice
Salt & pepper
Combine beef, bone, celery, onion and water, bring to a boil.
Lower flame and skim the surface until clear.
Simmer for 2 hours then add tomatoes and continue to cook 45 minutes.
Add okra and rice.
Cook final 30 minutes or until rice and okra are tender.
Season to taste with salt and pepper.
Serves 6 to 8.
