150 ml white grape concentrate
2 litres apple juice
1 k sugar
1 level teaspoon citric acid
1 tsp nutrient
water to 1 gallon
STEP BY STEP:
Boil sugar with 1 litre of the water. Cool.
Pour apple juice into 1 gallon glass demijohn, add half the sugar syrup
and all other ingredients except yeast.
Start yeast in 100mls warm water, and when bubbling, add to demijohn.
Top up to turn of shoulder with water.
Ferment 2 weeks. Rack and add remaining sugar. Ferment on until
fermentation has ceased.
Add 2 crushed Campden tablets and bottle 24 hours later.
