INGREDIENTS:

2 cup all purpose flour
1/4 tsp salt
1/8 tsp baking soda
6 tbsp butter or margarine, softened
2/3 cup mashed banana
2 tbsp honey
2 tbsp warm water

STEP BY STEP:

Preheat oven to 350 degrees F. Combine the flour, salt, and baking soda
in a large bowl
Cut in the butter until the mixture resembles coarse meal. Add the
banana and blend well
In a separate bowl, dissolve the honey in the warm water
Slowly add the honey/water to the flour/banana mixture and blend to form
a dough that will hold together in a ball
Divide the dough into 2 equal portions and roll the dough thinly
Cut into circles using a cookie cutter
Arrange crackers on a lightly greased cookie sheet
Prick each cracker in 2 or 3 places with the tines of a fork
Bake for 15 to 20 minutes or until medium brown, turning over once
during baking. Cool on a rack.
