CHICKEN POT PIE – A VIRGINIA FAMILY RECIPE

1 nice fat Stewing Hen (the fatter the better)
2 tsp Baking powder
1 tsp Salt
2 Eggs
1/2 cup Buttermilk
2 cup Flour

Cut chicken into pieces, cook over slow heat until tender.
Makes a thin paste of flour and milk, stir in broth, making a gravy.
(chicken may be removed, if desired)

Sift together dry ingredients.

In a large bowl beat together eggs and buttermilk, and add dry ingredients to make a dough.
Roll out onto pastry board.
Cut into 3 inch strips.
Place in a large baking pan.
Pour over this the gravy and chicken.
Bake this 15 to 20 minutes at 450 degrees.

For variation, some partially cooked vegetables may be added.
Also dough strips or biscuits dropped on top.
